The Capocollo made in Martina Franca is just one of the specialty foods of Puglia.


Il Capocollo Martinese is lightly marinated in Vin Cotto and smoked using the wood and bark of a local tree called Fragno (Quercus trojana). The pigs roam the Fragno woods eating their acorns.
