Cervia is a town in the province of Ravenna in Emilia-Romagna. It is surrounded by the Adriatic Sea, saltpans and ancient pinewoods. Cervia is known for its special salt. The salt is so pure that it has been referred to as "The Pope's Salt".
The harvested salt is "wholemeal salt" because it has been through a simple mechanical process: it is sorted, washed with water with a high salt concentration and then centrifuged many times until a maximum humidity of 2% is reached. Nothing is added or modified.
