Giuliano Trentino carries on his family's tradition of small production dried stuffed figs from Puglia.
Giuliano is the third generation of his family to continue the culinary tradition of dried and stuffed Pugliese figs. Beginning in July, his individually chosen fresh figs are sun-dried over a three month period in the open air. Giuliano returns his figs nightly to the protection of his well-ventilated storeroom.
Once the figs are sufficiently dried, he stuffs them with fennel seeds, bay leaves, cloves and lemon which are also hand-selected using his diserning standards. Giuliano refuses to increase his small hand-picked production despite the high demand for the tasty specialty.
