Chef Antonio Pellegrino's cuisine is based on traditional Sicilian cooking. He uses only typical regional products like almonds, pistacchio, citrus, swordfish, tuna and prawns to create exquisite dishes. Examples are marinated grouper, spaghetti with almonds, gnocchi with pistacchio, spaghetti with tomato and orange sauce, swordfish rolls with orange, or tuna sausage with onion chutney.
