Fregola Sarda

Fregola Sarda is a Sardinian version of couscous.


Fregola Sarda is a pasta made from semolina grains and luke-warm water that is rubbed into irregular balls. It is made in a terra-cotta pot called a sa scivedda. It can be used like pasta, or as a side dish. In Sardinia it is traditionally mixed with clams.
