Zampone

Zampone is a special dish cooked for New year's Eve dinners in Italy.


Zampone is made by selecting the choicest parts of a pig's shoulder, neck, ears, throat and shank of the pig, making sure it has the right fat content. These parts are then seasoned with cinnamon, cloves, salt, pepper and nutmeg, adding some pig skin that has been specially cut. This is mixed in a mortar and then stuffed into the pig's feet, which have been boned, cleaned and steamed. A specialty of Modena, it dates back to the 16th century. A special pan is used when cooking this dish, it is called a zamponiera
