Norcineria Asuini

Norcia, a small medieval town tucked away in the mountains of Umbria, has many special culinary delights. The area may be little known to outsiders, but as far as Italians are concerned, Norcia is the gastronomic destination par excellence for Pecorino, pork products and truffles.


Norcia isn’t much to look at- walled, rugged, intimate- its streets pleasantly old-fashioned throwbacks to the Italy of the 1950’s: women in black, teenagers on Vespas, behatted old boys in their Sunday best. Not much to look at, that is, until you turn to the shops, where it soon becomes obvious that the food here is something special, even by Italian standards.

In Umbria meat shops are called “norcinerie” and butchers are called “norcini”, both names deriving from the name of Norcia, this town famous for its highly skilled butchers who used to specialize in castrating and curing pigs and a bit of surgery on the side!

You can’t legally take any of Norcineria Asuini products back home, don’t leave without purchasing something for a picnic lunch or snack while on the road.
